My Favorite Salad (no dressing required)
1 avocado
1/2 bag of baby spinach
1/2 tsp garlic diced
1 Tlbs Extra Virgin Olive Oil
1 Roma tomato chopped
2 slices of lean or turkey bacon chopped
1/4 cup of shreded cheese (your choice, I like blue cheese crumbled)
1/2 cup cucumber choped
1/2 cup (meat, shrimp, chicken optional)
1/2 cup ends of green onions
First mince the garlic into the oil and coat your bowl with it. Wash and dry th 1/2 bag of spinach and place in bowl. I like to cup up my spinach into small pieces, mash the avocado with your hands that's right I said your hands and work it in with the spinach and oil in the bowl. Now you can add all the rest of the ingredients and stir so the avocado and garlic gets on everything. Your done now go eat!

Hamburger Stew
This time I'll use what my Mom reffered to as the Bean pot (Dutch Oven)
Ingredients:
1 lb hamburger meat or chicken
1/2 onion (sweet)
2 seasoning packets from Ramen Noodle Soup, the Creamy Chicken flavor ( you can throw some of the noodles in at the last minute if you like.
1-2 cups of cabbage, it depends on how much you like cabbage
1 large white potato or yam cut in bite size pieces
1 small can tomato sauce
1 can okra with tomatoes or Rotel Tomatoes
1 can or bag of green beans
1 can or bag (small) of mixed veggies
Add enough water to cover soup by 2 inches
Cornstarch and water to thicken if needed.
First cook your hamburger meat on med-low that keeps it juicy, don't brown it.
Add onions and cook till translucent. Pour off excess fat then add tomatoe sauce, cabbage, cans of veggoes and potaoes cover with water. When it starts to boil add the 2 packets from the Ramen noodles, stir till mixed in. Turn down to med-low and let cook for at least 30 min or until potatoes are tender. Stir trying to get the small potatoes to come to pieces add water as needed. If it isn't as thick as you like it add some cornstarch 1-2 tablespoons to a small amount of COLD water, once mixed add to the stew, stir constantly it will thicken quickly. With each serving if you want it a little richer add a tsp of butter or sour cream......butter makes everything better!! Well that's it....good luck!

Fantastic Easy Meatloaf
This was a meatloaf recipe of Alton Browns, but I've modified it to fit my family's pallet.
Heat oven 325°F
1 lb Lean ground meat
1/2 tsp each black pepper, cayenne pepper
1 tsp salt
1/2 tsp chili powder
1/3 onion chopped
1 carrot chopped
1/2 red bell pepper
2 whole cloves garlic chopped
1 egg
1/2 bag flavored croutons (garlic, onion or whatever your family likes)
Glaze:
1/2 c catsup
1 tsp ground cumin
Dash Worchestershire sauce
1 tlbs honey
Meatloaf:
Combine all dry ingredients, crush croutons mix
Combine the onion, carrot, garlic, and red pepper
Add all together with egg and meat and mix well
Pack this mixture into a large pan (tray) shape into meatloaf shape (like the picture). Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.
Glaze:
Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.

12 hard boiled eggs divided
4 oz cream cheese
1/2 cup onion
1/2 cup mayonnaise
1/2 cup pickled jalapenos

NO ROLL DOUGH Southern Living Recipe
1 packet of dry yeast, (2 1/4 tsp.)
1 cup of warm, not hot, water
2 tbsp of butter/shorting
•1 beaten egg
•3 tbsp sugar
•3/4 tsp salt
•3 To 3 1/2 C flour
Dissolve yeast in warm water in a large bowl. Add sugar, shortening, egg, salt, and half the flour;(1 1/2 cups) beat at low speed on electric mixer until smooth. Stir in the remaining flour slowly to make a soft dough.
Place dough in large glass bowl with bottom and sides sprayed with Pam, cover with warm wet towel and let rise in a warm place (85 degrees), free from drafts, an hour or until doubled in size, or cover and refrigerate up to 5 days.
Punch dough down; turn out onto a lightly floured surface and kneed 4 or 5 times. Shape and bake at 400 for 15-20 minutes.
